Here is a quartet of great breakfast recipes that you will love.  These are pretty simple and great tasting recipes that you can whip up in a matter of minutes. Great for the busy family on the move!





~ Breakfast Fruit Salad ~

This fruit salad is a great, high energy breakfast recipe.
We highly recommend it.

Breakfast Fruit Salad


Ingredients

1 apple, cored and diced

1 fresh orange, sliced

1 banana, sliced

1/2 cup orange juice

dash of cinnamon (to taste)

2 tsp. of raisins

Mix all ingredients and enjoy!





~ Buttermilk Pancakes ~

Buttermilk Pancakes

Ingredients:

1 cup Flour

1 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1/2 teaspoon Salt
1 Tablespoon Sugar

1 Egg

1 cup Buttermilk (or 1 TBSP Vinegar + enough Milk
to equal 1 cup~ let sit 5 minutes)

2 Tablespoons Butter (melted)

How I make it...

Using a wooden spoon, mix everything together except for the butter.
Do NOT overbeat. Add butter last.

Pour 1/3 cup batter onto hot griddle.

Yields: 10-12 pancakes

Webmaster note: You might try substituting soy milk!





For breakfast or brunch, this favorite can be as
hot or mild as you like.


Huevos Rancheros

Ingredients

2 Tbsp. extra virgin olive oil
1 small green or red bell pepper,
   finely chopped
1 small red onion, chopped
1 clove of garlic, minced
1/2 tsp. of marjoram
1 tsp. chili powder
1 can (8 oz) of tomato sauce
1 can (14.5 oz) of diced tomatoes
Sea salt and ground black pepper to taste
6 eggs
A couple dashes of your favorite hot sauce

How we make it

In a large skillet heat the oil and saute the
onion, peppers and garlic until tender.
Stir in the marjoram, chili powder, tomato
sauce and diced tomatoes. Cook until bubbly.
Lower the heat, season to taste with sea salt
and black pepper.
Crack eggs into the hot sauce and simmer over
low heat, covered, until eggs are firm.

Serves 6

* Serving suggestion: Wrap heated, refried
beans, baby spinach, sliced avocado and
shredded cheddar cheese in a warm tortilla.
Fold and place next to eggs on serving plate.
Put a couple of dashes of tabasco or hot sauce
on everything. Serve it up!





Here's an oatmeal breakfast that will energize you and get you off to a great start in the morning!

Jazzy Oatmeal

Ingredients:

1/2 cup cooked oatmeal (we love steel cut oatmeal)

3 tbsp. wheat germ

6 dry-roasted almonds (chopped)

1 small banana (sliced)

Cinnamon to taste

1 cup of soy, oat or rice milk
