Easy Crockpot Vegetarian Chili




About her Easy Crockpot Vegetarian Chili, our friend Lise said "This is my version of a vegetarian chili and it was created by combining ingredients from a few other chili recipes. I use crushed tomatoes because my daughter doesn't like tomatoes but she doesn't mind the crushed ones...go figure. I hate cooking so my slow cooker is my best friend!"

Well what slow cooker isn't somebody's best friend, right? Thanks Lise.  This recipe looks great. We think making chili in a crockpot is a great idea. Put it together and go do whatever you want to do - a few hours later - voila!

Easy Crockpot Vegetarian Chili

Ingredients

1 envelope of chili seasoning
1 big can of crushed tomatoes
1 can black beans, no juice, rinsed
1 can red kidney beans, with juice
1 small can of V8
1 can of corn
1 chopped onion
1 packet of veggie ground round (simulated ground beef)
1/4 cup ketchup
1/2 tsp liquid gravy browner
1/4 tsp garlic powder
1/4 tsp dry basil
lots of fresh cut up coriander or coriander paste

Instructions

Just add all ingredients in the crockpot

Cook on high for 4 to 4 1/2 hours.

If you want, sprinkle with grated cheese.

Get a warm baguette and eat it with a spoon...the best way to enjoy it.
