Exotic Pineapple Stuffing

A little taste of the islands perhaps?





This pineapple stuffing recipe sounds terrific! There is so much flavor happening in this dish that it simply makes for an exotic burst of taste.  This would be a great holiday addition with any type of holiday meal. Give the exotic pineapple stuffing recipe a try.





Exotic Pineapple Stuffing

Ingredients

2 cups of canned, crushed pineapple, drained
1/2 tsp. of cinnamon
1/4 tsp. of ginger
1/4 cup of egg replacer
4 Tbsp. Earth Balance
4 slices of light, whole wheat bread

How we make it

Preheat oven to 350 degrees.
Tear bread into cubes approx. 1 inch in size.
In a medium bowl mix the bread cubes and pineapple.
Add egg replacer to moisten the bread.
Add in the ginger and cinnamon.
Melt the Earth Balance in a small bowl.
Pour about 1/4 of the melted Earth Balance
over the bread and pineapple mixture.
Mix it well.

Spray an 8 x 8 inch baking pan with Pam or another
cooking spray. Spread the bread mixture evenly in
the baking pan. Pour remaining melted Earth Balance
over the stuffing mixture and bake for 15 minutes.

Check the center after 15 minutes. It should be firm
when done.

Makes 4 servings
