Rice Crust Pizza

It's the weekend and what better to make than a great pizza! This rice crust pizza is superb. For our toppings on this particular one we chose fresh cut basil, coarsely chopped; fresh cut oregano, finely chopped; green onions, chopped, 1 clove of garlic, chopped and sliced black olives!

For the sauce you can make your own, use tomato sauce or buy one of those jarred pizza sauces. It's all good!

The rice crust pizza is fun to make but a word of caution - it tastes great but it is a fork-eaten pizza. It does tend to fall apart a bit if you try to pick it up too soon to eat it. We're working on that!





Rice Crust Pizza

Crust Ingredients

2 cups of cooked brown Basmati rice
1 egg, beaten
1/2 cup shredded mozzarella cheese
1/2 cup Parmesan cheese

How we make it

To make the rice crust simply cook the rice
according to the package directions.

After removing the rice from the heat, beat
the egg in a medium sized bowl.

Add the rice while it is still reasonably
hot. Add both types of cheese.

Mix thoroughly and spoon onto the middle
of a lightly oiled pizza baking pan.

With a fork, spread the rice mixture around
to fill up the pan. Press the rice firmly in
order to "pack" it down.

Place the pan with the rice crust in a
pre-heated (350 degrees) oven and bake for
about 12 to 15 minutes.

Remove from oven and allow to stand for about
five minutes. Then add sauce, shredded mozzarella
and any of your favorite toppings.

Pop it back in the oven and bake for 15 - 25
minutes. After removing from the oven allow the
rice crust pizza to rest for about 10 minutes
before cutting. Enjoy!
