Murdle's Chick Pea Salad is a terrific recipe. There is so much color and so much flavor it almost jumps out of the bowl at you! The chick pea salad was submitted by our friends at the Col. Murdle's Chick Pea Salad
1 can (15 oz.) of chick peas, drained
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1/2 cup of snow peas
2 Tbsp. fresh parsley, minced
1 tsp. of lemon juice
1/2 cup of extra virgin olive oil
1 small carrot, diced
1 cup of cooked black eye peas
How we make it
Combine all ingredients in a large
mixing bowl. Toss gently, but thoroughly.
Chill for at least 30 minutes.
Serve with garlic bread and pasta.
