Veggie Pizza Pita






A veggie pizza pita?  Sure, why not? This is a reasonably quick way to serve up a delicious lunch treat. Whether you're at home with the kids or just want to treat yourself, this lunch recipe beats callin' the pizza guy (unless, of course, the pizza guy is a hot dude that you would like to have knock on your door - but that's on you)!

Seriously though - this veggie pizza pita really is a tasty treat. The kids will love 'em. We think you will too!





Veggie Pizza Pita

Ingredients

2 whole wheat pitas, split to make 4
round halves
8 Tbsp. of tomato puree
1 tsp. of oregano
Sprinkle of garlic powder
4 Tbsp. of grated cheddar or vegan cheddar cheese
4 Tbsp. low-fat shredded mozzarella or vegan
mozzarella cheese
Add diced veggies of your choice: zucchini,
green peppers, onion, mushrooms, black olives, etc.

How we make it

Put tomato puree on the pita halves, spreading
evenly over the entire surface.

Sprinkle oregano, garlic powder and cheeses on
top.

Cover with veggies and bake at 350 degrees for
about 12 - 15 minutes or until cheese melts.

Makes 4 servings
