Green Beans, Basil and Mint

Green beans are anything but boring when you create this gem!





This green bean casserole recipe was sent to us by our friend Mary Lou, who we dearly miss. We have eaten it on several occasions and it always seems better each time we make it.  Thanks Mama Lou!
This green bean, basil and mint casserole is sure to brighten up any holiday menu!



Green Beans with Basil and Mint

Ingredients

6 cups water
2 lbs. fresh green beans, trimmed
2 cloves garlic, finely chopped
1/2 cup shredded fresh basil
1/3 cup shredded fresh mint
1 small red sweet pepper, chopped
2 Tbsp. olive oil
1/2 tsp. salt

In a 4 qt. Dutch oven, bring water to boiling.
Add green beans and return to boiling; reduce heat.
Simmer, uncovered, for 7 to 8 minutes or until beans
are crisp-tender, adding garlic for the last minute of
cooking. Drain after cooking.

Meanwhile, in a large bowl, combine the basil, mint,
sweet pepper, olive oil and salt. Add drained beans
and garlic. Toss gently to combine.

Makes about 8 servings
