"Zingy" Broccoli

Broccoli doesn't have to be boring!







This "zingy broccoli" dish takes a healthy, but sometimes boring, vegetable and turns it into a real taste delight that is sure to have your dinner guests asking for this simple but delicious recipe.



"Zingy" Broccoli

Ingredients

1-2 heads of broccoli crowns (about 1lb.)
1 Tbsp. extra-virgin olive oil or grapeseed oil
2 cloves garlic, finely minced
1 tsp. red pepper flakes
Sea salt and freshly ground black pepper, to taste

How we make it

Wash and separate the broccoli florets from the stalk.
Steam the broccoli, covered, for about 1 minute.
The broccoli should be bright green, but still crisp.
Drain it and set aside.

Meanwhile, heat the oil in a medium-size sauté pan over
medium heat. Add the garlic and cook for 1 minute,
stirring constantly. Add the red pepper flakes and
cook for 30 seconds more. Add the steamed broccoli,
stirring well in order to coat the florets.
Cook for 2 minutes. Season to taste with sea salt
and pepper.

Makes 10 servings, 1/2 cup each.

Per serving: 25 calories, 1.5g total fat (0 g saturated fat),
3g carbohydrate, 1g protein, 1g dietary fiber, 40 mg sodium.
