Candied sweet potatoes are pretty much a holiday staple. Our traditional sweet potato recipe is easy to make and you can veganize it by simply leaving off the marshmallows or using vegan marshmallows. You can use yams as well as sweet potatoes for this terrific dish.
Candied Sweet Potatoes
6 medium sweet potatoes (about 2 pounds), scrubbed and unpeeled
1/3 cup brown sugar
3 tbsp water
3 tbsp butter
2 tsp Seasoning Salt
3/4 tsp Pumpkin Pie Spice
Boil potatoes in salted water for 25 to 30 minutes or until tender; drain well and cool slightly. Slip off skins and cut into thick slices; place in 1.5-quart casserole.
In medium saucepan, combine brown sugar and remaining ingredients; cook over medium heat, stirring constantly, until smooth and bubbly. Pour over sweet potatoes; mix well. Bake uncovered at 350ºF for 30 minutes, stirring frequently, until well glazed.
If desired, sprinkle top of casserole with a handful of miniature marshmallows about 5 minutes before removing from oven.
Makes 6 servings.
