Cheddar Bread

This moist, chewy, tasty bread
is just right with so many soups or chilis!

Cheddar Bread is a great recipe to make if you are planning to have chili or soup!  This amazing bread is very flavorful and tastes great! It is an easy bread recipe and one loaf may not even last through dinner!

This terrific cheddar-bread, while not a vegan recipe, should be able to be adapted rather easily. We will be trying it again in order to adapt it to vegan. In the meantime, perhaps our LOV friends will enjoy it as is.

Cheddar-Bread

Ingredients

2 cups of all-purpose flour
2 tablespoons of grated Parmesan*
1/2 cup of shredded cheddar*
2 teaspoons of baking powder
1 teaspoon of sugar

1 egg, lightly beaten*
1 cup of soy or almond milk
2 tablespoons of Earth Balance, melted
1 tablespoon of spicy brown mustard
3 to 5 drops of Asian chili sauce or Tabasco

How we make it

Preheat oven to 375°F.
Lightly coat with oil and flour, a 4 X 8 inch loaf pan.

In a large bowl, stir together the first six ingredients.

In a separate bowl, combine the remaining ingredients.

Make a "well" in the middle of the dry ingredients and add the liquid ingredients. Stir to mix well, until fully combined.

Spoon into greased pan. Bake for 45 to 50 minutes or until toothpick inserted in the center comes out clean.

Cool on a rack. Serve warm.

About 190 calories per 1/2 - 3/4 inch slice.

* Veganize it? Try this recipe with vegan Parm and cheddar as well as egg-replacer equivalent to one egg.
