Faux Egg Salad

Easy to make, delicious to eat - those are the two main ingredients in this faux egg salad sandwich!









Our friend Alaine contributed this recipe. Editorial protocol made it necessary to call it faux egg salad, which it is, but we always refer to it as A-gg Salad.  A-gg Salad is the name given to the recipe by Alaine.

No matter what you call it - faux egg salad or A-gg salad - the fact is that it is another quick, easy to make lunch recipe that tastes great, will satisfy you and help you create yet another healthy lunch option!





A-gg Salad (Faux Egg Salad)

Ingredients:

1 container of x-tra firm tofu

1 cup of Vegenaise

1 tbsp. onion powder

1 tbsp. of dill weed

1/4 tsp. of French's Yellow Mustard


How we make it


1. Open, drain and press the tofu

2. While it's draining, mix all of the other ingredients

in a small or medium bowl and chill.

3. After the tofu is drained, cut it into cubes about 1/4"
to 1/2" - hint: if you make the cubes irregular and vary
the size a bit, it looks more like egg white!

4. Mix tofu into the Vegenaise mixture.

You can eat it right away or chill it for a few hours to let
the flavors blend. This is amazing on pumpernickel bread!
