Oven Roasted Beets

The sweetness of the beets is offset by the peppery topping in this delicious roasted beet recipe!





Oven Roasted Beets is probably one of my favorite foods. I love beets to begin with but roasting them in the oven seems to really bring out their earthy flavor.

This recipe is great anytime but really makes a tasty side to dress up your holiday table.

Oven Roasted Beets

Ingredients

4 medium red beets with the stems and root
removed and scrubbed
2 tsp. of extra virgin olive oil
1 clove of garlic, minced
1/2 tsp. sea salt
1 1/2 tsp. of fresh ground black pepper
1 tsp. of white wine vinegar
water

How we make it

Preheat oven to 375 degrees. Spray a baking pan with vegetable oil
cooking spray or add enough water to just cover the bottom.

Stand beets in pan, leaving room between each beet. Bake until
tender when pierced, about 1 to 1 1/2 hours. Remove from oven and
allow to cool. Remove skins.

Cut into wedges and place on serving plates.

In a small bowl combine olive oil, vinegar, garlic, pepper and salt.
Whisk until well combined. Add enough water to thin it to the desired
consistency. Drizzle over beets and serve warm or at room temp.

Serves 4 with only 43 calories and 2 grams of fat per serving.
